Bacon Ranch Fried Corn


Serve this along side some burgers, hot dogs, maybe some ribs. It's perfect for a summer BBQ! Packed full of flavor with onions, bacon, poblano pepper, ranch and cheese. "Isn't that just kick you in the crotch, spit on your neck, fantastic?" (Friends reference)


What I love about cooking is how creative you can get. Most of my recipes are straight forward and can be tweaked to fit YOUR taste, just as this one is.




Ingredients:

  • 2 cans of corn, drained

  • 5 slices of bacon, sliced (or diced, if you prefer a smaller bite)

  • 1 poblano pepper, diced

  • half an onion, chopped

  • 1/4 cup parmesan, grated (or any cheese you like)

  • 1 tbsp ranch seasoning

  • 1 tsp garlic powder

  • salt and pepper, to taste



Directions:

  1. Chop your onion into small, bite size pieces. Dice the poblano into small pieces. Set both aside.

  2. Slice into small strips (or dice), 5 slices of bacon. Cook in a large skillet on medium-low until done (some people like chewy bacon, some like crispy, again it's all up to your liking)

  3. Set the cooked bacon aside on a plate, drain the bacon grease but leave about a tablespoon to two worth.

  4. Add the corn, onion, and poblano pepper to the warmed grease in the skillet. Season with garlic powder, ranch seasoning, salt and pepper. (If you're watching your salt intake, omit the salt and let the saltiness of the bacon do the job)

  5. Simmer all of this on a nice low setting, stirring occasionally to prevent sticking. Cook until the onions have become transparent in color. (If for some reason it does stick, add a wee bit more grease or olive oil)

  6. Stir in grated parmesan (or add any kind of shredded or grated cheese), let simmer for another 2-3 minutes (or until melted).
