Ingredients:
2 large tomatoes, diced
Half a poblano pepper, diced
Half an onion, diced (I ALWAYS use sweet Vidalia)
Cilantro, chopped (about half a cup)
2 cloves of garlic, minced
Juice of 1 lime
Salt
Pinch of cumin
Directions:
Dice the tomato, poblano and onion. Mince the garlic and chop the cilantro. Add to bowl.
Squeeze juice from one lemon in bowl.
Add a pinch of cumin. Season with salt to desired taste.
