One Pan Chicken Scampi

I love one pan/pot meals, it just makes life so much easier. If you're anything like me, you might detest dish washers because they NEVER DRY! So the less to hand wash, the better.



This recipe is a favorite date night meal of ours. A modern day, quarantine date night! Any meal with wine as an ingredient just calls to be made on date night, that way you can just finish the rest of the wine! Am I right?


In the Bentley house, we use a term, "SPG." Salt, pepper, and garlic. The three absolutely essential seasoning ingredients for literally just about everything. Any kind of meat, vegetable, soup, rice, sauce, anything. The basic seasoning for this chicken is just that, SPG. Simple!




Ingredients:


  • 1 lb chicken tenderloins

  • 2 tbsp olive oil

  • 1/2 tsp garlic powder

  • salt & pepper

  • 1/3 cup butter

  • 2 cloves garlic, mined

  • 1/4 cup onion, diced (a nice small dice)

  • 1/2 tsp red pepper flakes

  • 1/2 cup white wine (preferably a dry wine)

  • 1 1/2 cups white rice, cooked

  • 1/2 cup parmesan cheese, grated

  • chopped fresh parsley for garnishing, optional



Directions:

  1. Season chicken with garlic powder, salt and pepper. (You can't really measure the salt and pepper when it comes to seasoning your meats, it becomes habit and eyesight. Really, you just want to lightly sprinkle over all the chicken.)

  2. Heat olive oil over medium heat in a large skillet. Cook chicken until nice browned and just cooked through (165F). Remove chicken, set aside, covered.

  3. Add butter, onions, and red pepper flakes. Saute until the onions become translucent, now add the garlic.

  4. Increase the temperature to medium-high and add the white wine. Stir vigorously for a few minutes until the mixture is reduced by about half.

  5. Remove about 2 tbsp of the mixture, set aside. Bring the temperature down to a medium-low and add the cooked rice. Stir everything together, let it simmer for about 5-10 minutes so the rice soaks up the flavor.

  6. Sprinkle about 3/4 of the parmesan over rice, arrange chicken tenders in skillet over rice. Drizzle the reserved 2 tbsp of pan sauce over chicken, sprinkle on the rest of the parmesan and garnish with chopped parsley (optional).
